What dishes are typical of Peru?

Every day, representatives of our cuisine create new techniques and variations of dishes that definitely delight the palate of its lucky diners. Gastronomy and typical dishes in Peru

Ceviche

The most internationally recognised Peruvian gastronomic representative. A source of pride and a symbol of national identity. It is so successful that it is served with different variations in other Latin American countries. This delicious seafood dish is mainly made with pieces of fish, onion, chilli, lemon juice and salt. However, depending on the presentation, the following may be added sweet potatocorn, corn, cancha serrana and seaweed (yuyo).

Grilled Chicken

This typical Peruvian dish is the most consumed in Peru, its exquisite taste makes it a favourite when Peruvian families get together. The marinated chicken is cooked on the embers in a special oven, making it rotate on its own axis. This Peruvian must-try is accompanied by a hearty portion of crispy potatoes and salad. This succulent dish is so important in Peru that on the 16th of July every year the "Día del Pollo a la Brasa" (Day of the Grilled Chicken) is celebrated.

Cause Stuffed

Normally, this dish can be found in two presentations: "Causa stuffed with chicken" and "Causa stuffed with tuna", both of which are extremely delicious. Prepared with yellow potato and green pepper, you can add different ingredients such as Peruvian corn and mayonnaise, avocado (avocado), hard-boiled egg, olives and lettuce. It is presented in a circular shape and decorated according to the chef's taste.

Huancaína Potato

It can be eaten as a starter or as a main course. This exquisite dish has its origins in the city of Huancayo, department of Junín. Milk, soda crackers, white cheese and chilli are poured into a blender. The next step is to pour the huancaína cream on yellow potatoes, decorating finally with lettuce and an olive.

Chicken Chilli

It is a fusion of Quechua and Spanish ingredients. This typical Peruvian delicacy consists of a thick cream made with shredded chicken, bread, green chilli, milk and broth. Served with rice, Peruvian potatoes and garnished with olives, hard-boiled egg and lettuce. Its spicy flavour makes it a family favourite.

Anticuchos

Made with beef heart, although it may not sound very appetising, it is really delicious! Skewered on cane sticks and seasoned with aji panca pepper, anticuchos are usually served with corn, golden or boiled potatoes and chilli pepper. It is usually eaten with the traditional chicha morada made from Peruvian purple corn.

Lomo Saltado

A traditional Peruvian Creole dish. Made with chunks of meat, onion, tomato and fried potatoes. Particular for its different preparation technique, placing all the ingredients in a hot frying pan and seasoning with pepper, ajinomoto and cumin. Usually, the lomo saltado is accompanied by rice.

Rice with Chicken

Rice grained with parsley and spinach (which gives it its green colour) and cooked with peas, carrots and chicken. It is usually served with Huancaína Potato and garnished with onion.

Pachamanca

One of the most traditional dishes of the Peruvian highland gastronomy. The way it is prepared is quite particular, all the ingredients are cooked on preheated stones placed in the ground. Pork, beef, guinea pig and chicken, along with potatoes, sweet potato, corn, pods and cassava are essential for a good pachamanca.

Cuy Chactado

With a very peculiar and delicious taste, the Cuy Chactado is fried in abundant oil, usually on a stone cooker. Accompanied by boiled potatoes and salad, this dish is rich in proteins and minerals.

Peruvian Juane

One of the most representative dishes of the jungle cuisine. Although there are several types of Juane, the ingredients of the original are cassava, rice and chicken. These are wrapped in banana leaves or Bijao leaves. It is traditionally accompanied by Chicha de Jora.

Tacacho with Cecina

Another representative dish of the Peruvian jungle. Tacacho is a dough made from plantain, while cecina and chorizo is pork. It is usually prepared on a grill. It is prepared with different traditional spices from this part of Peru, which gives it that characteristic local flavour.

Carapulcra

Traditional Peruvian dish prepared with boiled dried potatoes and accompanied by pork or chicken meat. Carapulca is seasoned with spices such as aji panca, aji mirasol and garlic.

Stuffed Potato

Potato dough fried in plenty of oil and stuffed with meat, onion, olives and hard-boiled egg. It is a good option as a snack, it can be found in different food stalls, mainly in the streets of Lima.

Rocoto Relleno

The most representative of Arequipa's cuisine. The rocotos are stuffed with ground meat, peas and cheese. Next step, seasoned with cumin and chopped parsley. Although it is traditional from Arequipa, it can be found in Lima without problems.

Olluquito with Charqui

Its two main ingredients are exclusively native to Peru: olluco, a tuber that grows in the Andes, and charqui, dried llama meat.

Caucau

Prepared with boiled tripe in chunks and diced potatoes. Seasoned with different spices such as cumin, garlic and palillo. It is served with grained rice and can be garnished with parsley.

Peruvian Chaufa Rice

Created by the fusion of Chinese and Peruvian food. It consists of fried rice accompanied by pieces of chicken, egg omelette and different types of meat. A classic of Peruvian gastronomy, you can find this delicious dish in the famous "Chifas".

Tacú Tacú

Based on a mixture of grained rice and the previous day's vegetable stew (beans, lentils, pallares, etc.). It can be accompanied with pieces of chicken, meat or fried egg. A little olive oil will give it a special touch.

Tamales

Used as a starter dish in most Peruvian stews. Prepared with a corn base, it is filled with pork or chicken. Pieces of hard-boiled egg, olives and peanuts can also be included.
